The flowers are sprouting, and our seasonal allergies are acting up. That can only mean one thing: springtime has officially arrived. Speaking of spring, one of our favorite springtime holidays is happening NOW — it’s Earth Day! In Disney World, we’ve seen everyone from Disney Springs to Disney’s Animal Kingdom get involved in the festivities.

Today we’re back to visit a Disney World hotel serving a fun little Earth Day treat. Who’s hungry?
Behold, the Cactus Cake! We found this limited-time treat at The Mara (home to the famous Zebra Dome treat) at Disney’s Animal Kingdom Lodge.

This specialty dessert is made up of a chocolate cake layered with peanut butter filling, strawberry jam, and topped with buttercream icing. It’s like a peanut butter sandwich combined with chocolate cake; we like the sound of THAT!

The Cactus Cake
We know you shouldn’t judge a Disney treat by its looks, but we must admit that this is a cute little cupcake. The cake was fresh and moist, and the peanut butter layers are nice and thick with a sweet jelly layer between them. You can’t go wrong with chocolate and peanut butter — it’s a classic for a reason!

Now, here’s a tip: you’re going to want to eat this FAST! Our terracotta-inspired chocolate planter melted pretty quickly. If you’ve ever tried a Mickey Bar, you know how fast a thin chocolate shell can melt in the Florida sun.

Looks at those LAYERS!
If you love peanut butter or consider yourself a peanut butter and jelly lover, this is worth a try! If you aren’t a fan of peanut butter and tend to steer clear of overly sweet Disney treats, you can skip this one.

Eat it quickly! It will likely melt!
