A NEW restaurant is opening in Disney World in just a few short days! Bourbon Steak by Michael Mina is coming to the Walt Disney World Swan and Dolphin Resort on July 26th, 2025.
Bourbon Steak will offer a reimagined modern take on the quintessential American steakhouse. We were lucky enough to get a sneak peek at this new restaurant before it officially opens to the public, and we’re bringing you our FULL thoughts!
Chef Michael Mina is a renowned chef who owns more than 40 restaurants worldwide. He has multiple Michelin stars and currently has other restaurants in Florida, including Bourbon Steak in Aventura and Prime 54 in Miami Beach. We’re excited to see what Chef Mina is bringing to Orlando!
This restaurant replaced Shula’s Steak House at the Swan and Dolphin. We’re pleased to note that there was a 100% retention rate among staff who were at Shula’s and have now moved over to Bourbon Steak.
Reservations for Bourbon Steak by Michael Mina are available on OpenTable.com for dates starting July 26th, 2025. This restaurant was themed initially to the 1972 Miami Dolphins “Perfect Season.”
The booths look incredibly comfortable, and we love the dark teal accents throughout the room. We thought it felt brighter and more welcoming compared to the original, darker lighting.
Look at this gorgeous presentation board, too. We can’t wait to see all the steaks delivered on this.
We can’t WAIT until Bourbon Steak officially opens its doors. We’ll be there on opening day so we can bring you our full review of this new Disney World restaurant. In the meantime, make sure you stay tuned to the Disney Food Blog for the latest Disney news and more!

Disclosure: In nearly all circumstances, Disney Food Blog writers and photographers pay full price for their own travel, hotel, food, beverage, and event tickets. We do this because it’s important to us as journalists to ensure not only that we give you unbiased opinions, but also that you can trust us to do so since we’re paying our own way. On rare occasions, when we are invited by a company to attend a preview as media, and when we choose to accept that invitation, we will always make you, our readers, aware of that situation. Today, we were invited by the Walt Disney World Swan & Dolphin to attend their media preview of Bourbon Steak by Michael Mina. Note that when we attend events as media we are 1) Not required to review that event/food on any of our channels, and 2) Not required to review that event/food favorably. You can always count on DFB to give you a 100% unbiased and honest review of any event that we attend, food that we eat, or beverage that we drink. You can see more in our Disclosure Policy. Can’t wait to try it! So happy the staff of Shulas was able to stay as shulas was my husband favorite. Sad to see it go.
