We recently got the chance to stop by Toledo — Tapas, Steak, and Seafood at Disney’s Coronado Springs Resort for a media event, and we are bringing you along with us!
This restaurant is a Michelin Guide-recognized restaurant that is located at the top of Gran Destino Tower. It has stunning views of Disney World through its floor-to-ceiling windows, plus a delicious menu filled with cuisine inspired by Spain. If you are looking for a fantastic lounge, make sure you check out Dahlia Lounge, which is located right next door, for equally impressive views!
We started the evening off at Dahlia Lounge. This lounge is also located on the 16th floor of Gran Destino Tower, right across from Toledo.
We think this lounge is truly a hidden gem. Not only does it offer a menu of yummy bites and tasty sips, but the views are unmatched. You can enjoy the views inside, or head out to the patio!
The lounge itself is also gorgeous. It is such a great spot to enjoy a drink and light bite — or even a full meal! We really think it is worth making a trip over to Coronado Springs for this lounge.
While we were at Dahlia Lounge, we got the chance to try the Sangria Tinto which is made with Viña Borgia Garnacha, Torres Magdala Naranjas del Mediterráneo Liqueur, simple syrup, and orange. This drink was sweet, fruity, and refreshing. It is a wonderful drink to sip while savoring the views of Disney World.
After a quick stop at Dahlia Lounge, we headed over to Toledo for our meal! Just like Dahlia Lounge, Toledo is a stunning restaurant. The focal point of the restaurant (besides the wonderful views) are two olive trees and vaulted ceilings with color-changing stained glass. The colorful ceiling represents the four seasons, and the colors will change throughout your meal.
We started off our meal with some wines. Toledo highlights Spanish wines with over 50 choices that are hand-selected by their Master Sommelier. We were poured both a red and white wine to experiment with different pairings throughout our meal. The Sommelier explained that in Spain the vineyards don’t get as much rain, so it produces much more of the dry tasting wines. They were a bit more on the dry side and we thought they were both exceptional.
The red wine was the Bodegas Vatan, Triton, 2022 vintage, 100% Tinto de Toro (Tempranillo). It was full bodied, with hints of smoke and lots of red cherry flavor.
The white wine was the Paco & Lola Albariño from the Rias Baixas, 2023 vintage. It was a bit sweeter than the red wine, and we tasted notes of apples and grass.
We started off by tasting some of the tapas offered at Toledo. We were given smaller sizes of these tapas, so if you actually order them at the restaurant, you will receive a larger portion! Toledo has an on-stage tapas kitchen where all of these dishes are prepared. We started off trying a small selection from The Spaniard which is the chef’s signature selection of artisanal charcuterie and cheeses.
Everything was fresh and delicious. The bread was crispy and buttery, and the meats were fatty and savory. There were two cheeses; one was similar to blue cheese, and the other was a harder cheese that was nutty and creamy. It was also served with a dish of olives and soft apricots.
Next up, we tried Charred Octopus, Rioja-braised Chorizo, and Gambas al Ajillo. Our reporter that attended the event is allergic to shellfish, but they did get the chance to try the Rioja-braised Chorizo.
The Rioja-braised Chorizo was very yummy! It wasn’t spicy at all and had gravy-like sauce. The meat was juicy and had a great snap to the covering.
Up next, even more tapas! This time we were able to try the Olive Oil Poached Tuna with Cherry Salsa, ‘Tortilla Española’ with Onion Marmalade, and a Mussel Salpicón.
The tuna was soft and tender and was served with a tangy, cherry slaw on top. The fish tasted very fresh, and the combination of the fresh fish and acidity of the slaw balanced this dish very nicely.
The ‘Tortilla Española’ was a surprise favorite! It reminded us of an egg white omelet with a sweet onion topping. It also had some herby flavors as well. We would definitely want to try this item again!
That wraps up the tapas, now onto the main course! We got the Salmon that the chef was nice enough to pan-sear for us to avoid cross-contamination with the shrimp that is cooked on the plancha. Normally, the Salmon is plancha-seared. It is served with asparagus purée, vizcaina sauce, and seasonal garden vegetables.
The salmon was tender and moist. It had a slightly crispy shell on the top which we really enjoyed, while the inside was smooth as butter. It was served with tender veggies: asparagus, onions, and peppers. The sauce was herby and silky smooth. It was also topped with some crispy beans on top that had a lovely crispy coating while being nice and soft inside.
Finally, we finished the meal off with a trio of desserts. These are also sampler sizes of some of their dessert offerings, so you will get a bigger portion if you order them in the restaurant.
We started off with The Toledo Tapas Bar, which is a dessert tasting the flavors of Spanish Coffee, crunchy chocolate, raspberry mousse and lemon curd. The chocolate bar had three different mousses on top: a coffee one, a raspberry one, and a lemon curd. It was fun to see how the bar changed flavor as you tried it with each of the mousses. The pastry chef recommends you start with the coffee one and finish with the raspberry one. This bar had lots of chocolate flavor, and we particular loved the raspberry mousse paired with it!
Next up was the Basque Cheesecake. The cheesecake is served with honey-vanilla sauce, almond crunch, honey-quince glazed seasonal fruit, white chocolate Chantilly cream, and hibiscus tuile. This was our favorite one — although they were all tasty! It was creamy, fluffy, and a bit lighter than a normal cheesecake. It had a bit of a caramelized and bitter taste to the very top layer, which worked really well with the milky, creamy inside
Finally, we also got a taste of the Classic Crema Catalana which is served with a Valencia orange and chocolate tuile. This was a sphere of custardy goodness. It had a strong vanilla flavor and was creamy. Definitely another favorite that we will be getting on our next trip to Toledo!
We had such a delicious meal at Toledo, and it is hard to beat the views! This is a great option for an upscale meal at Disney World. You can even enjoy views of the fireworks from the restaurant.
