I just made these and they are AMAZING! I didnāt expect them to taste so good with the chickpeas, but they did! These might just be the best cookies Iāve made, definitely making these again! The fact that theyāre healthy, just makes me like them even more!
P.S. Everyone in my house loved them too, theyāre almost gone!
Today I found out that Johnnie from AT&T is my iPhone guardian angel.
The discovery all started with my annual swimsuit purchase from Marshallās. I donāt know what that says about me, because:
- Marshallās swimsuits have the potential to fit awkwardly,
- I certainly donāt need a swimsuit every year,
- I certainly donāt need a swimsuit this year because weāre not going on vacation.
Yet every year I seem to be able to find one suit I like, that fits, that I can afford, and today was no different.
But somewhere between my parking spot and the highway, I realized that I didnāt have my wallet. Like, my brand-new-iPhone-credit-card-driverās-license wallet.Ā After inspecting under every car in the parking lot, harassing the Marshallās cashier, and being removed from behind the cashier counter for attempting to use the cashier-only phone, they finally came to their senses and let me use the cashier-only phone on the customer side of the counter.

With customers checking out on either side of me, a Marshallās cashier rolling her eyes at me, and a chocolate bunny display inches from my face, I called Bjork.Ā He used his fancy computer thingamajig to locate my phone, and it was bad news.Ā My iPhone was showing up on the map, but almost a mile away.
Iām not sure if youāve ever lost an iPhone, but I imagine it feels something like losing a wedding ring, which miraculously I have not done yet. Emotions run even higher when the iPhone is not just lost, but stolen, and driving further away from you every second that you spend on the phone at Marshallās.
Get in my car and chase the person down?
Call the police?
Curl up in a hole and die?
Enter Johnnie from AT&T.Ā Johnnie, in his supercool iPhone guardian angel sort of way, called Bjork and said, āHey, I found this phone in the parking lot at Marshallās.Ā I have it at the AT&T store.Ā Come get it whenever.ā
There were a few tears of joy shed in front of the chocolate bunny display at Marshallās.Ā Which is a small price to pay for such a happy ending.

Oh, right.Ā Healthy cookie dough.Ā Letās talk.
Sometimes you just need to eat cookie dough straight up.Ā Washed down with more cookie dough, and then just one more bite of cookie dough.Ā This is for those times.
This cookie dough is soft, peanutbuttery, brownsugary, vanillaey, and delicious in the most wonderful cookie doughy way, but {gasp} itās healthy!Ā Healthy cookie dough? Yeah. Chickpeas are blended into the dough for the same texture without all the butter.
Please oh please.Ā Donāt get me wrong.Ā I love butter.Ā But sometimes you need to eat a whole bowl of cookie dough in one sitting.Ā And for that reason, I give you this recipe.

Healthy Chocolate Chip Peanut Butter Cookie Dough
- Total Time: 20 minutes

Description
This chocolate chip peanut butter healthy cookie dough is just that ā healthier! And so good. Made with chickpeas in place of all the butter.
Ingredients
- 1/2 cup packed brown sugar
- 1/4 cup soft tub light margarine or butter (I used Brummel and Brown yogurt spread)
- 1 tablespoon egg whites (can omit if not baking)
- 1 teaspoon vanilla
- 2/3 cup chickpeas, drained and rinsed
- 1/4 cup peanut butter
- 2/3 cup flour (whole wheat or regular)
- 1/4 cup rolled oats
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup dark, milk, or semisweet chocolate chips
Instructions
- In a large bowl, beat the brown sugar and margarine together. Add the chickpeas, egg whites and vanilla. Beat until smooth (see notes). Stir in peanut butter.
- Add flour, oats, baking soda, and salt to the bowl and mix again until a soft dough forms.
- Eat, refrigerate, or freeze the dough. If you want cookies, bake at 350 for 7-10 minutes, until just slightly set. Do not overbake. Makes 12-15 cookies/cookie dough balls.
Notes
My mixer wasnāt quite strong enough to do the trick (plus there were chickpeas flying everywhere) so I switched over to the food processor to get the chickpeas blended. Then I transferred the mixture back to the mixing bowl.
The cookies wonāt flatten out much during baking, so if you want a flatter cookie, you should press the tops down before baking.

Isnāt it great when you still find people out there who do the right thing?? I panic when I canāt find my iPhone in my own house ā I canāt imagine how you must have felt. But, heck, eat the cookies and celebrate. And about those cookies, theyāll be showing up in my kitchen really soon, in the dough form and then in my belly.

It was really good cookie dough considering there are BEANS in it. Even Bjork came around to loving it, which is kind of a big deal! Beans are no butter, thatās for sure, but if I had to make a healthier version this is how Iād do it!!

I canāt even imagine. I freak when I put my hand in my bag blindly and canāt find my iphone within 5 seconds (itās always hiding in the corner somehow). My wallet has been stolen before straight out of my bag and the anxiety I felt when that happened was no where near the level of anxiety I feel when I *think* Iāve lost my phone. Credit cards can be cancelled, bank accounts frozen, new licenses ordered, but iphonesā¦thatās a $700 set back!
I wouldāve needed some cookie dough too! Iāve made the healthy cookie dough dip before too using chickpeas, itās pretty much straight up brilliance for whoever figured that substitution out!

I lost my brand new iPhone 4S A WEEK before Christmas, in a parking lot while shopping. Luckily the person who picked it up (and turned it off, debating keep it for himself), finally got in touch and gave it back to me. Itās definitely not an understatement to say it feels like losing a child, thatās exactly how i described it.

Do you ever use canned chickpeas? Theyād be a faster alternative! And if not, it wouldnāt be all bad to just make regular cookie dough instead. š

Woohoo, a healthy chocolate chip cookie dough recipe! I too love the idea of being able to sit and eat a whole batch of dough without worrying about my butt instantly growing twelve sizes. I love the idea of adding a can of chickpeas to the mix too, in order to up the protein. Can you detect a bean taste at all? Not that it would bug me since I really like chickpeas. Just not sure it would go over well with the Hubs.
My husband was slightly weirded out at first but after it sat in the fridge for a few hours he was snacking on it like crazy. I actually liked it better right away (not chilled) and we both also liked it baked! So many options! š
